It has been a heatwave all over the country, so maybe soup isn’t the first thing you think of on a hot day. But, recently the “Soup Nazi” take-out store re-opened in Manhattan, popularized by Jerry Seinfeld in his comedy series.
You don’t have to wait in line and be ready with your order and your cash in hand (or else “no soup for you!”) to enjoy cool soups this Summer. Meli Melo Restaurant at 110 Madison Avenue New York City, featuring French and Mediterranean Bistro Cuisine, is sharing some of their soup recipes with The Advice Sisters. Try these at home (or better yet, visit the restaurant and let them do the cooking):
Pea Soup with Goat Cheese Crumbles
Three pounds of green peas are undercooked in two quarts of chicken broth. Place four diced potatoes to add to thickness (as desired). Blend mixture, serve cold with a topping of crumbled goat cheese.
Meditteranean Mussels Soup
Cook three pounds of mussels in a big pot. Add in one cup of diced shallots, black pepper, salt, one liter of wine. Also one liter of half and half and one liter of heavy cream. Simmer until mussels open. Place jus in a large pot. Remove mussels from the shell. Blend jus and half of the mussels. Use the other half to garnish soup along with a green veg, such as parsley or coriander.
Vine Tomato and Strawberry Soup
Start with one pound of ripe tomatoes. Place in warm water to remove the skin. Place skinless tomatoes in a blender with a half teaspoon of celery salt, 1 pound of sliced strawberries, a quarter pound of cranberries and honey to taste. Serve in a square glass dish with a small spoon that has scooped vanilla ice cream. Garnish with fresh mint.
Start with five pounds of watermelon (pits removed), two pounds of honeydew melon (scooped), and two cups of cantaloupe (scooped balls). Place melons in a blender. Add a glass of fresh-squeezed orange juice. Add honey to taste. Serve in large pasta plate. Place several melon balls at the bottom. Ladle in the soup topped with a teaspoon of sour cream, toasted/sliced almonds, and fresh mint.
TIP: add a green salad and a piece of fresh, crusty bread and you have a no-cook meal!
