114 million viewers tuned into last years’ Super Bowl #49 , making it the most watched television show in U.S. history. A week from now, the Carolina Panthers and the Denver Broncos will battle it out for supremacy in this years’ 50th anniversary NFL Super Bowl in Levi’s Stadium in Santa Clara, California. Many of our readers will be sitting down in front of television sets with friends to watch”the big game.”
Whether you’re hosting a Super Bowl party, or just hunkering down by yourself of with someone special, food is an important part of the Super Bowl ritual. What’s the fun of watching all the action without friends, and food?!
I attended a really fun event courtesy of JC Penney and hosted by Actor Jerry O’Connell and Chef Josh Capon that ended with a fabulous cooking demonstration by Josh and Jerry showing editors how to easily upgrade “game day” classics. Why settle for frozen snacks and dips from a jar when you can make something special for that special day?
Among the items that Josh made were Chicken lollipops: wings on the bone but without the mess; Filet Mignon Cheesesteaks: kicking up the traditional philly cheesesteak a notch; and Green Dragon Shrimp Skewers: just because it’s winter doesn’t mean you can’t grill indoor. He also made some delicious pressed sandwiches with a panini press (now that I’ve tried pressed sandwiches I have to get a press–why eat a cold “wich” when hot is so much better)?
I shot this video of Chef Josh making “chicken lollipops.” The video runs 7:15. These “wingers” are easy to make and they’re perfect for parties. Josh has been on plenty of TV shows and his own restaurants include Lure Fishbar, B&B Winepub and El Toro Blanco so watch the entire video and enjoy his infectiously fun personality and talents! I’ll give you the recipe, below.
Chef Josh Capon Makes Chicken Lollipops
Recipe: JC Penney & Chef Josh Capon’s Chicken Lollipops
Ingredients:
5 lbs chcken wingettes ; 1 cup flour; tsp fresh lime juice ; 1 cup fresh lime juice ; 1 cup seasoned rice wine vinegar ; vegetable oil (for frying); black and white sesame seeds ;celery, carrot and cucumbers sticks ;salt & pepper ; 1 bottle Franks Hot Sauce (or your favorite brand of buffalo sauce); 1 pint bleu cheese dressing; 2 cups hoisin sauce; 1/4 cup soy sauce ; 2 tsbp tabasco ;
Preparation:
1: chop off both ends of the wingettes using a cleaver removing the joints. Pull out one of the two bones and push the meat to one side. Set aside in fridge until ready to use
2. Make Asian BB Sauce” whisk together hoisin sauce, hoisin sauce and tabasco
3. marinate the the cucumber sticks in the rice wine vinegar (for 1 hour – then remove and put in fridge)
4. pre-heat fryer to 375 degrees
5. season wings with salt and pepper and lightly dust with flour. Fry at 375 degrees ;in small batches until cooked and golden brown
6. drain and place in a bowl. lightly season with salt. toss with choice of sauce and coat all sides. serve with blue cheese and carrot and celery sticks. Garnish Asian BBQ wings with sesame seeds and picked cucumbers.
7. Serve immediately.
In the video above you’ll see the Chef go through the entire process. If you wanted to shave some time off this recipe you can make the lollipops earlier in the day or the night before, or just use standard wings (but what fun is that)? Also, you could use other types of dressings if you liked. These were “snarfed” (there is no other word) by the editors.
